Vitamix Apple Butternut Squash Soup

Resist the urge to pre-cook your butternut squash.

Apple Butternut Squash Soup

Ingredients

  • 1 pound peeled butternut squash, cut into chunks
  • 1 medium onion, sliced
  • apple cut into quarters – leave the seeds
  • 1 1/2 cups of chicken stock (but I cheated and used store bought chicken broth)
  • 1 tsp Celtic Sea Salt (this is what I use)
  • dash of Olive Oil
  • dill or Italian herbs to season
  • 1/2 cup of countertop yogurt (optional)

Directions

Seriously.  Vitamix recipes are the easiest blog posts to write.  Stick it all in the Vitamix, except the Italian herbs and yogurt.

Run on high speed, level 10 for approximately 10-12 minutes.

In hindsight:  I would have caramelized the onions for better flavor.  But that’s just me!

Serves approximately 2-3.

  1. So it is ok to leave the apple seeds in? I thought there was something about them not being too delicious or safe to ingest?

  2. I am looking forward to trying this recipe, but… I always heard that apple seeds were toxic and should be removed before processing.

  3. Yes, apples have a compound that, when digested, produces the toxin cyanide. however, our bodies can detoxify this poison quite well in small doses. you would have to eat the seeds of a ton of apples at once to run any risk of dangerous toxicity levels.

    1. You make me feel old!!! The Vitamix is about 4? maybe 5 years old. And we got it from Vitamix . . . though I am drooling over the new ones that they are demoing at Costco! Nice website you have, Lenny!

    1. Rob! So sorry it was too much onion for you. I think in the comments I listed that I wished I had caramelized the onions and several have used less onion.

  6. Wow, unbelievable. This was great soup! Thank you so much. I peeled the squash – a friend has a very sharp peeler that is wider and easier than a potato peeler – I was using her VitaMix. The remarkable thing was how it cooked into a perfect, velvety, good tasting puree. I simply seasoned it with turmeric, but will experiment more next time.

  8. I made this only I took your suggestions to caramelize the onions and it was really great! I used cashew cream instead of yogurt to make it vegan. I used a red apple but next time I’d use a green one instead.

  9. Curious why should I resist cooking the squash first? I love roasted squash and think it would be yummy but maybe you have a good reason? I do plan on caramelizing the onions – and I’m using shallots.

    1. I agree, roasted squash is yummy, but in this case I allowed the Vitamix to cook it by running so long . . . I was trying to make it more of a “one pot meal.” But feel free to cook it!!

    1. The reality is that it probably could be one serving (especially if you are doing the GAPS diet) but 2-3 servings.
